Hi, there was some work done on FSI by CBC.Solve (https://launchpad.net/cbc.solve), though this is quite old now. There is also the work done by FEniCS-hpc, which is documented in some of their papers, for example,
Jansson J, Degirmenci NC, Hoffman J. 2017 Adaptive unified continuum FEM modeling of a 3D FSI benchmark problem. Int. j. numer. method. biomed. eng. 33 , 1–12. (doi:10.1002/cnm.2851)
This uses the “unified continuum” approach, and a good paper on applying this to finite elements (but not fenics specifically) is,

None of this is really a demo, but hopefully it is useful. I am working on this myself at the moment, but don’t really have anything ready to share as a full demo yet.
